15oz shoe peg corn, drained
1 cup black eyed peas, drained
2 avocados, chopped
2/3 cup cilantro, fresh
2/3 cup green onions
1/2 cup tomatoes, chopped
Dressing:
1/4 cup olive oil
1/4 cup balsamic vinegar, white
3/4 tsp salt
1/8 tsp black pepper
1 tsp cumin
2 garlic cloves, minced
Mix together ingredients.
Mix the dressing ingredients and pour over.
Best to make one day prior to eating.
